How come when something in a science text is proved wrong...?

How come when something in a science text is proved wrong, they fix the idea and release the book again with the correct information. But when a holy book is proven wrong people just say, oh, they must have meant that figuratively... If things keep going this way, won't holy books be completely figurative in a few years, and pretty much obsolete?
